It doesn’t get much more classic than this NOLA standard.
Pack an Old Fashioned glass with ice and set aside.
In a second Old Fashioned glass, muddle the sugar cube and bitters, and add the rye whiskey.
Pour the ice out of the first glass, add the Herbsaint and rotate the glass to coat the inside, discarding any excess.
Add the whiskey mixture to the prepared glass and garnish with a lemon peel.
