Ingredients

  • Half a ripe kiwi, peeled
  • .5 oz St-Germain
  • .75 oz Simple syrup (one part sugar, one part water)
  • Club soda
  • 3 to 4 oz Brut sparkling wine

Garnish: Kiwi slice

Glass: Cocktail

Preparation

In a shaker, muddle the kiwi. Add the simple syrup and St-Germain, and fill with ice. Shake until chilled and add a splash of club soda. Strain into a cocktail glass and top with the sparkling wine. Garnish with a kiwi slice.
